Dustbin Beer
I have chosen to put this recipe in here just because it is fermented and could make vinegar if it is no good. I have not made it yet. I intend too, very soon.
Bring 4.5 litres of water to a boil and add;
1.365 kg of plain malt extract
455 grams of white sugar
2.5 grams of Epson salts
Place 85 grams of dry hops into a muslin bag, tie securely add to pot and simmer for 30 minutes.
Remove hops,
Add the malt liquid to 3 gallons of warm water in a dustbin, cover and leave over night.
Next day add;
juice of half a lemon
120 mils of cold tea
5 grams of dry yeast
Cover and leave, check daily.
When the foam on top resembles meringue, skim, cover and leave.
When the liquid is clear, usually 2 to 3 days, siphon into bottles, add 1/2 teaspoon of sugar to each bottle before capping.
Mature for at least 2 weeks but preferably 4 to 8 weeks.
makes 18 liters.
